Apple Spice Risotto (dessert)
This is delicious and serves about 4
3 tbsp butter
1 cup risotto (arborio) rice
1 peeled/cored apple, chopped into fairly small pieces
1/3 cup sultanas or raisins
3.5 cups apple juice
1 tbsp rum
1 tbsp vanilla essence
2 tbsp brown sugar
1/2 tsp cinnamon, nutmeg or allspice
Melt butter in large saucepan (~25 cm diameter). Add uncooked rice and apple, and cook for 2 min, stirring constantly. Add all other ingredients, bring to the boil, and then simmer for 20-25 minutes until most of the liquid has evaporated, stirring occasionally. Add more apple juice if more liquid is required for the rice to cook completely.
Allow to cool for 5-10 minutes and serve.
